Fresh basil — Genovese, ideally — goes on a Margherita just before or after the bake depending on style. AVPN-spec Neapolitan: leaves placed on top of the unbaked pie before going into the oven, so they wilt and infuse but don't blacken (the 90-second bake is too short to scorch). NY-style: torn and added off-heat, so the leaves stay green. Never dry basil on a pizza.
