Whole-peppercorn Tellicherry or Malabar black pepper, coarsely cracked at the moment of use, is the right choice for cacio e pepe pizza, a finishing scatter on a Roman tonda, or a crack over a finished bianca. Pre-ground black pepper has lost most of its volatile aromatics within a week. Use a mortar or a coarse-grind setting on a mill — fine pepper turns dusty and bitter on a hot pie.
