Coarse, lightly toasted breadcrumb scattered over the top of a sfincione is what keeps the surface dry through a long, slow bake — the breadcrumb wicks up surface moisture from the onions and tomato so the top finishes crisp instead of soggy. Toast plain breadcrumbs in olive oil with a little salt and oregano in a dry pan, 5 minutes, until golden. Not interchangeable with panko (too coarse, too crisp).
