Hot honey — honey infused with chili, often vinegar — became the breakout American pizza condiment of the 2010s through Paulie Gee's hellboy and Roberta's, and through Mike's Hot Honey as a packaged product. Drizzle off-heat over a soppressata, pepperoni, or sausage pie. Make your own by warming honey with a sliced fresno or calabrian for 10 minutes and a splash of cider vinegar.
History
Paulie Gee Giannone is generally credited with mainstreaming hot honey on pizza at Paulie Gee's in Greenpoint (opened 2010). Mike Kurtz's Mike's Hot Honey, also from Brooklyn, scaled the format into a national consumer product.
