About
Morton kosher salt has a denser, flatter flake than Diamond Crystal — about 1.5–2× as much salt per teaspoon by weight. It dissolves a bit more slowly and concentrates flavor more aggressively per pinch. For dough, it doesn't matter which kosher you use as long as you weigh it; for finishing a baked pie, Diamond's lighter flake is more forgiving but either works. The only rule is consistency: don't swap one for the other mid-recipe without recalibrating.
