Fresh rosemary is the canonical bianca herb — a few sprigs torn into 1-inch pieces and pressed lightly into an oiled, salted bianca al taglio before the bake, or scattered over a potato pie. Dried rosemary is acceptable but the flavor is duller; the resin in fresh sprigs survives a 14-minute bake at 525 °F intact.
