Fresh spinach for pizza needs a step home cooks skip: wilt in a pan with a little oil and garlic, drain, and squeeze hard in a clean towel until almost no water comes out. Raw spinach on a 25-minute bake will weep enough water to sog the crust. Two ounces of raw spinach reduces to about half a cup squeezed — plenty for one pie.
