About
Vodka sauce on pizza — popularized by Lucali, Scarr's, and L'industrie in the 2010s — is essentially the pasta-sauce vodka recipe: tomato, butter, cream, a splash of vodka, parmesan, and chili. Cook it down to a thick, spreadable consistency. On a grandma or NY round it goes under the cheese; the result is rich, slightly pink, with a mild chili background. Make a day ahead and chill — it spreads better cold and won't break under the heat.
History
Vodka pizza migrated from the pasta-vodka boom of 1980s Italian-American restaurants. The slice-shop adoption is a 2010s Brooklyn / Manhattan phenomenon; L'industrie's vodka pie (opened 2017) is often cited as the breakout.
