About
Wisconsin brick cheese (Widmer's, Hill Valley, Carr Valley) is a mild, semi-soft cow's-milk cheese with high butterfat and a slightly tangy finish. It's what gives Detroit its frico edge: pushed against the oiled blue-steel pan walls, the high fat caramelizes into a lacy, crackling crust as the bake finishes. No substitute reproduces it exactly. A 50/50 blend of low-moisture mozzarella and a young white cheddar gets you within shouting distance.
