About
Cup-and-char pepperoni is small-diameter (16–18 mm), natural-casing pepperoni that curls into a cup as it bakes, pooling spiced fat and crisping at the edges. Brands: Ezzo (the slice-shop standard), Margherita Old World, Vermont Smoke and Cure. The behavior comes from the natural casing — not the meat. Plastic-cased pepperoni stays flat. Layer under the cheese for a flat top, on top of the cheese for cups.
