About
Pistacchio di Bronte DOP is the small, intense, slightly piney pistachio grown on the slopes of Mount Etna in eastern Sicily. On pizza it's a garnish: crushed coarsely or shaved fine and scattered over a mortadella slice or a pesto bianca. Buy shelled, raw, unsalted. American pistachios (Wonderful, etc.) work but skew sweeter and less aromatic.
