Dried Sicilian or Greek oregano, on the bunch ("oregano on the stem") or as loose flakes, is the canonical pizza herb — far more pizza-relevant than fresh oregano, which tastes too vegetal. Crumble between the fingers over a red sauce before or after the bake. Buy whole-leaf in vacuum bags; the powdered shaker stuff in supermarkets is mostly stems and dust.
