About
Instant dry yeast (SAF-Instant Red is the gold standard) is granulated yeast that hydrates instantly when mixed into a wet dough. Add it directly to the flour; no proofing in warm water required. IDY is the default for nearly every recipe on the site because it's stable on the shelf, dose-precise at fractions of a percent, and direct-replaceable for active dry at 1× and fresh yeast at ⅓×. Store the opened jar in the fridge.
Substitutes
- Active dry yeast (ADY) — use 1.25× and proof 5 min in warm water
- Fresh (cake) yeast — use 3×; crumble into flour
